I’ve been interviewed about a million times about food trends for 2018, and one that I keep seeing (and saying) is TAHINI. It’s the savoury, sweet, nutty sesame spread that’s so common in Middle Eastern and Mediterranean cuisine that is crazy addictive. And I can tell you first hand that it’s making an appearance in literally everything, especially dessert. The last day I was in San Francisco on my holiday I had an AH-MAZ-ING tahini ice cream with little bits of halvah and sesame candy in it. I literally got on the plane a few hours later and wrote the concept for this recipe for Vegan Salted Tahini Gluten Free Cookies! No dairy, no gluten, just lots of healthy fats, fibre and protein.

If you’re a fan of that sweet-salty combo, your’e going to swoon over these Vegan Salted Tahini Gluten Free Cookies. And they couldn’t be easier, either. I just mix together almond butter, tahini, oat flour, rice flour, apple sauce and coconut sugar until you get a really moist batter that transforms into a crispy exterior and a soft interior. And if that wasn’t addictive enough, I add a generous sprinkle of fleur de sel and sesame on top. HOLY CRACK.

When we were testing these, we made a few batches until we perfected them, and after I shot them (and ate a few), I packed the rest up in a container. Well, 15 minutes after hubby got home and they were ALL GONE. Yes, even the “dud” version that we didn’t use and the ones we burned! Vegan Salted Tahini Gluten Free Cookies

These Vegan Salted Tahini Gluten Free Cookies are a deliciously healthy, paleo, plant-based snack that you and your family will totally love!

  • 1/2 cup almond butter
  • ¼ cup plus 2 tbsp tahini
  • 2/3 cup coconut sugar
  • 6 tbsp apple sauce
  • 2 tsp vanilla
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 6 tbsp gluten free oat flour
  • 2 tbsp brown rice flour
  • 1/8 tsp salt
  • White sesame seeds (for sprinkling on top)
  • Fleur de sel (for sprinkling on top)
  1. In a medium bowl, mix together the almond butter, tahini, coconut sugar, apple sauce and vanilla.  Add in the oat flour, rice flour, baking soda, powder, and salt. Mix well and refrigerate for 1 hour.
  2. Preheat oven to 350 F and prepare two baking sheets with a silpat or parchment.
  3. Roll the dough into balls and place on the baking sheet far apart. These cookies will spread a lot so give them lots of room. Sprinkle generously with sesame seeds and salt and bake for 10-11 minutes until lightly golden. They will still feel soft but will harden slightly as they cool.
  4. Enjoy!
